I made a fresh batch tonight to break in our new Cuisinart food processor. We got the little guy, it's just the two of us, plus the cat, and I don't think Whisper likes hummus...
There's hardly any prep to do at all for hummus. Chickpeas, tahini, olive oil, lemon juice, and garlic. The basic recipe I use is:
1 - 16 oz can of chickpeas, drained - reserve 1/4 cup liquid
2 cloves of garlic, crushed
1 1/2 tablespoons tahini
3 tbs fresh lemon juice
2 tablespoons olive oil
Salt to taste
Dump all this in your food processor and whomp it (That's a technical cooking term, whomp. It means to blend the bejeebers out of it) until it's nice and smooth.
That's it. You've just made hummus. It doesn't taste like it should be that simple, right? Well... if you want to get fancy you can:
- Add few roasted red peppers
- Sprinkle on some toasted pine nuts
- Chop some cilantro or parsely and sprinkle on top
- Add Chipotle Tabasco
- Crumble some feta on top
- Blend in some kalamata olives
